Food Waste Manifesto 2023

Culture shapes our food habits and behaviour, including our approach to tackling food waste. Since 2020, we have led the Great Taste-Zero Waste project, which is working towards a more sustainable food culture. Over the years, an international network of food professionals has been established. Members work within the themes of food waste, food innovation, and sustainability. Over the years, they have organised workshops and events where they have shared their knowledge on the subject. The project culminated in 2023 with the release of the “Food Waste Manifesto”– a publication that unites experts from seven countries, all dedicated to creating sustainable food solutions. The Food Waste Manifesto will help ensure that chefs and kitchen professionals in the region have access to the right knowledge for a sustainable operation of restaurants and institutions.
